Executive Chef Derrick Ang revealed that the Torched Marshmallow Durian Ice Cream was inspired by a trip to Korea, where he saw sweets like brownies and cookies encased in marshmallows. The idea was adapted to fit the durian theme through multiple rounds of research and development to create the version now being served.
The buffet is available for Friday dinner, Saturday lunch and dinner, Sunday lunch, as well as on the eve of public holidays for dinner and public holidays for lunch.
